Ask a more experienced drinker and they might add the origin — Ethiopia versus Colombia versus Guatemala. Ask a specialty coffee professional and they'll immediately bring up something most consumers have never considered:

The processing method.

Of all the variables that shape the flavor in your cup — origin, altitude, variety, roast level, brewing method — processing method may be the single most dramatic. Two coffees from the same farm, the same harvest, even the same tree, processed differently, can taste so unlike each other that you'd swear they came from different countries.

You've probably seen the terms on specialty coffee bags: washed, natural, honey process. They appear alongside the origin information, often without explanation — as if the reader already knows what they mean.

What Is Coffee Processing?

To understand processing, you need to remember one key fact from our seed-to-cup article: coffee beans are seeds. Specifically, they're the seeds found inside the coffee cherry — a small, sweet fruit that looks something like a cranberry.

After harvesting, the goal is to extract the seed from the fruit and prepare it for export as green coffee. But there's more than one way to do that — and the method chosen has profound consequences for flavor.

The fruit surrounding the coffee seed contains sugars, acids, and fermentation-active microorganisms. Depending on how long the seed spends in contact with the fruit — and under what conditions — those compounds influence the flavor of the final bean in dramatically different ways.

Think of it this way: processing is where the farmer sculpts the flavor profile of the coffee before it ever reaches a roaster.


The Three Primary Processing Methods

Washed Process (Also Called Wet Process)

What it is: In washed processing, the coffee cherry's outer skin is removed immediately after harvesting using a mechanical depulper. The seed — still coated in a sticky layer of fruit called mucilage — is then placed in water tanks where it ferments for anywhere from 12 to 72 hours. This fermentation breaks down the remaining mucilage, which is then washed away with clean water. The clean, naked seed is dried on raised beds until it reaches the ideal moisture content for export.

Why it's done: Washed processing gives the farmer and processor maximum control over the final flavor. By removing the fruit influence early and washing the bean clean, the processing method steps back and lets the bean's intrinsic character — its terroir, its variety, its altitude — speak without interference.

What it tastes like:

  • Clean, bright, and transparent
  • Higher perceived acidity — often citrus, lemon, bergamot, or stone fruit
  • Delicate and nuanced — every characteristic of the origin is on clear display
  • Tea-like body in lighter roasts
  • Consistent and predictable from cup to cup

The flavor analogy: If coffee processing were cooking, washed processing would be steaming — the most neutral method, designed to let the natural flavor of the ingredient shine without adding anything new.

Natural Process (Also Called Dry Process)

What it is: In natural processing, the coffee cherry is harvested and placed — whole and intact, fruit and all — directly on raised drying beds in the sun. The entire cherry dries together for anywhere from two to six weeks. As it dries, the seed absorbs flavor compounds from the surrounding fruit — sugars, esters, and fermentation byproducts that fundamentally alter its flavor profile. Once fully dried, the fruit is removed mechanically, revealing the green bean inside.

Why it's done: Natural processing is the oldest coffee processing method in the world — originating in Ethiopia and Yemen where water was scarce and sun-drying was the most practical option. Today it's used intentionally for the extraordinary flavors it produces — flavors that simply can't be achieved any other way.

What it tastes like:

  • Intensely fruity — blueberry, strawberry, tropical fruit, dried fig
  • Wine-like complexity and fermented sweetness
  • Full-bodied and rich
  • Lower acidity than washed, but more sweetness
  • More variable and unpredictable than washed — each lot has its own personality

The flavor analogy: If washed processing is steaming, natural processing is braising — a long, slow process that infuses the ingredient with the flavors of everything surrounding it, producing something richer, more complex, and more boldly flavored than the original.

Where you'll find it: Ethiopia (particularly the Sidama and Guji regions), Brazil (where flat terrain and dry climate make it practical at scale), and increasingly in Central America where producers are experimenting with it for premium lots.

The trade-off: Natural processing requires meticulous management during drying. The cherries must be turned regularly to ensure even drying and prevent mold or unwanted fermentation. Done well, the result is spectacular. Done carelessly, defects can creep in — sourness, mustiness, or unpleasant fermented notes that signal a processing problem rather than a flavor feature.

This is why the quality of the producer matters enormously with natural process coffees. A well-managed natural from a skilled producer is one of the most extraordinary flavor experiences in coffee. A poorly managed one is a mess.

Best for: Coffee lovers who love bold, fruit-forward flavors and aren't afraid of complexity and intensity. French press and Aeropress brewing preserve the full body that natural process coffees deliver. They also make exceptional cold brew — the fruit notes become syrupy and dessert-like in cold extraction.

Honey Process (Also Called Pulped Natural)

What it is: Honey processing is the middle path — a deliberate hybrid of washed and natural that combines elements of both to produce something distinctly its own. Like washed processing, the outer skin of the cherry is removed mechanically shortly after harvesting. But unlike washed processing, the mucilage — that sticky, sweet fruit layer — is left on the bean, either partially or completely, during drying.

The name comes not from any use of actual honey, but from the sticky, golden appearance of the beans as they dry on the raised beds — coated in mucilage that glistens in the sun.

The spectrum of honey processing: Honey process isn't a single method — it's a spectrum defined by how much mucilage is left on the bean:

Where you'll find it: Costa Rica pioneered honey processing as a deliberate specialty technique and remains its spiritual home. El Salvador, Guatemala, and increasingly Ethiopia and Colombia are also producing exceptional honey process lots.

Best for: Coffee lovers who find washed coffees too delicate and natural process coffees too intense. Honey process is the gateway processing method — it rewards beginners with accessible sweetness while offering enough complexity to fascinate experienced tasters. It performs beautifully across almost every brewing method.

Honey + Light to Medium Roast: The natural sweetness of honey processing pairs with the brightness of a lighter roast to produce something immediately accessible and deeply satisfying — complex enough to reward attention, approachable enough for every morning.

Any Processing + Dark Roast: As we explored in our roasting article, dark roasting tends to overwrite origin and processing character with roast-driven flavors. The differences between a dark-roasted washed and a dark-roasted natural are significantly less pronounced than they would be at lighter roast levels.
