This Chiapas coffee comes from the Café de Mujeres program, a lot grown by 212 women farmers in the Soconusco region of Chiapas, Mexico’s southernmost state. Each woman farms about 1.8 hectares on average. They are smallholders, but together they are working to expand economic opportunities for women in coffee. Buying this coffee supports their work directly.

In the cup: Dark chocolate, warm nuttiness, and a light, fresh-fruit citrus sweetness with a balanced body. Chiapas’s humid, tropical climate and high elevation give this coffee its delicate flavors and bright acidity.

Where it comes from: Strictly High Grown (SHG) Soconusco coffee, blending Typica, Bourbon, Caturra, and Catuai varietals. The cherries are hand-depulped, fermented in small tanks, and fully sun-dried, then milled and sorted to European Preparation specifications. 

How we roast it: City roast, roasted to order in small batches at Jeff’s Java, so it never sits in a warehouse before it ships to you. City roast keeps the chocolate and nut notes front and center while preserving the citrus brightness.
